Mother Jones has a story about how 29-year-old Tim Galarneau wants to remake college dining halls by trying to convince 1,000 colleges and universities to buy 20 percent of their food from sustainable sources by 2020.
I got out of college in 2000 and the place I went to seemed relatively enlightened at the time about food choices. There was a wok with veggies to stir fry, a salad bar, a place to make sandwiches, and you could even get veggie burgers and veggie hot dogs.
